Foodways
Traditional Arts in Upstate New York offers a series of foodways programs which feature local culinary artists leading hands-on workshops which teach participants how to make a diverse range of traditional dishesÂ
These events are part of TAUNY’s Kitchen Stories series, which invites home cooks to prepare a meal in The TAUNY Center’s demonstration kitchen and share stories and memories associated with a beloved family recipe or cultural food tradition. Participants help prepare food, learn how to cook special dishes, and get to know each other. Once the food is ready, everyone relaxes and enjoys their meal together in great company!
Breadmaking
Breadmaking is a practical andd quite straightforward process which yields a beautiful, fragrant additions to any meal. A wide vareity of breads are featured in TAUNY’s breadmaking workshops, where culinary artists teach participants how to prepare and decorate classic breads.  In particular, breadmaker Tom Van de Water leads a step-by-step sourdough bread making workshop, which emphasizes how to have sourdough “work for you, not vice versa.” The focus is on starting, kneading, and baking the dough and participants will leave with starter dough to bake at home.
Crepes
Workshops in Crepe making led by multiple culinary artists have a longstanding history at TAUNY, and this dish was one of the first offered in the Newberry Cafe, a remains one of the most popular items on the menu. With origins in French Folklore and local roots in Quebecois culture, their circular nature symbolizes a coin or the sun – and have become a staple of the TAUNY Kitchen and Foodways programs.
Indian Samosas
Indian Samosas, Chutney & Chai is a hands on workshop led by culinary artists Rajiv & Geetika Narula, and are a popular and consistent offering of TAUNY’s Foodways programming. These artists teach how to make these traditional dishes as they share their stories of India and their passion for cooking and sharing food. Samosas are delicious fried parcels of flaky-yet-tender pastry, stuffed with spiced potatoes, are part of the Indian culinary experience. These delicious offerings and the intricacies of their creation is a wonderful addition to TAUNY’s educational programs and further represent the distinct dishes found in the North Country.
